Winter Warmer Wonders: Spiced Macarons with Wintry Fillings

Winter, for many, seems to bring its ongoing challenges for the body and soul, with its cold, dark, long and hopeless moments, however, just as everything in life, a lot depends on the viewers’ attitude… The cold shows transparent white beauty for those who bother to look…The dark gives sparkle and magic to the ones who are willing to stop…The long and supposedly boring afternoons offer many hours to create for those who are open to learn art….like the art of spices. Spices have been celebrated through human history for their special flavours, aroma and health benefits. Research has proved that certain spices have direct powerful and positive effects on the body. Spices to bring delicious taste and healing to food, and their warming effects feel especially good in winter.

Beside its sweetness of cinnamon is able to reduce the levels of cholesterol in the blood. In experimental studies, cinnamon and cardamom were found to prevent cancer and to enhance detoxification by the liver. The fragrant cardamom heals the respiratory tract. Cloves improve blood circulation and get their piquant flavour from eugenol, a potent anti-inflammatory chemical. The tangy taste of ginger, sliced or grated awakens the flavours of sweet desserts. Ginger contains some of the most powerful natural anti-inflammatory substances known, whilst also treats arthritis, vertigo, migraine headaches, and various digestive problems, especially nausea. Spices are true gifts of Mother Nature.

Ingredients
Cinnamon, clove and cardamom macarons
4 egg whites, at room temperature
200 g granulated sugar
130 g almond meal
280 g confectioners sugar
1 tsp cinnamon
1/2 tsp clove
1/2 tsp cardamom
Roasted walnut macarons
4 egg whites, at room temperature
200 g granulated sugar
130 g ground roasted walnut
280 g confectioners sugar
For the fillings
1 apple (peeled and pureed)
2 tbsp Pumpkin puree
1 tsp Honey
5 tbsp icing sugar
4 tbsp Apricot jam
Fresh ginger, grated
1 tsp black pepper

Method
Sieve the ground nuts (almond meal or walnut) and icing sugar together, set aside. Beat the egg whites over medium-high speed until they begin to froth, then add sugar, gradually. Continue beating the mixture until eggs whites are glossy and stiff peaks form. In a separate bowl, whisk the remaining ingredients into the icing sugar mixture until well blended. Add half of the dry mixture to the egg whites, fold slowly until all ingredients are well combined, then repeat with the other half of the dry mixture. It should slowly dripping off the spatula back into the bowl and easily absorbing back into the batter at the bottom. Transfer batter into a piping bag, than pipe onto a parchment paper-lined baking sheet. When all the batter is piped out, firmly tap the baking sheet onto a hard surface. Preheat the oven to 150 degrees C and bake macarons in oven for about 12-13 minutes. Remove from oven, lift parchment paper with macarons onto a wire rack and let cool completely before removing and filling. For the filling of the cinnamon, clove and cardamom macarons make a pumpkin-apple cream by grating one apple, pushing the liquid out of it through a sieve and mixing it with 2 tbsp pumpkin puree, 1 tsp honey and 5 tbsp icing sugar. For the roasted walnut macarons’ filling mix apricot jam with freshly grated ginger. Once the macarons have cooled, pipe a generous layer of icing between two halves.
