Some hold onto the belief that the ‘Rocky Road’ crunch bar has its name originated from its “bumpy surface”-like appearance, however, the truth is that the christening history of these delicious treats came from their history. Rocky Road was invented in Australia in 1853, aiming to sell confectionery that was spoiled by the long journey from foreign (mainly European) countries. The local businessmen outside towns like Melbourne, were rich but having lack of cultural knowledge, some savvy, crafty merchants took advantage of these men, mixing the spoiled confectionery with low quality chocolate and other ‘filler’ ingredients, such as locally foraged nuts. The name Rocky Road is derived from the ‘Rocky Road’ travelers had to take to get to the Australian gold fields.

The confectionery has a different set of ingredients in Australia, in the USA and in the UK. When making this utterly luscious candy, there is no rocky road to success, it is really an easy ride…
125 g soft unsalted butter
300 g dark chocolate, broken into pieces
3 tbsp golden syrup
200 g rich tea biscuits
100 g mini marshmallows
2 tsp icing sugar, to dust

Heat the butter, chocolate and golden syrup in a heavy-based saucepan over a gentle heat. Remove from the heat, scoop out about 125 ml of the melted mixture and set aside in a bowl. Place the biscuits into a plastic bag and crush them with a rolling-pin until some have turned to crumbs but there are still pieces of biscuit remaining. Fold the biscuit pieces and crumbs into the melted chocolate mixture in the saucepan, then add the marshmallows.Tip the mixture into a square baking tin (about 20 cm) and smooth the top with a wet spatula. Pour over the reserved 125 ml oz of the melted chocolate mixture and smooth the top with a wet spatula. Refrigerate for minimum two hours, preferably overnight. To serve, cut into fingers or triangles and dust with icing sugar.
In the USA it is claimed that the Rocky Road candy bars were the creation of candy maker, Sam Altshuler, a Russian immigrant who entered America in 1917, where he learned the art of candy making, and after years of perfecting his recipe in the family kitchen, he found success with the Rocky Road candy bar in 1950. Today, apparently, it is ranked one of the best-selling candy bars on the West Coast of the USA.
