An Ode to Autumn: Honey and Corn Cupcakes with Candy Corn Filling

Harvest, usually during the months of September, is a celebration of the food grown  traditionally on the land. Ceremonies to give thanks and celebrate a successful production of the Earth are worldwide and indeed ancient. In Europe,people have given thanks for successful harvests since pagan times, celebrating with singing, providing samples of food for the Gods and Goddesses and decorating homes and communal places with baskets of fruit and food, freshly cut wheat and gathered corn. Harvest then slowly became religious to remind all Christians of all the goodness of the one, true God and what he gives them. Harvest is about sharing with others who are fortunate or who are not so, a time to contribute in elevation of poverty and to help people in need.

Ingredients
170 g yellow cornmeal
120 g all-purpose flour
1 tablespoon baking powder
115 g granulated sugar
1 teaspoon salt
100 ml whole milk
2 large eggs
115 g butter, melted
90 g honey

Directions
Preheat oven to  190°Cd. Line a tray with 18 muffin cups. In a bowl cream together butter, sugar until light and fluffy, about 4 to 5 minutes. Add honey, eggs and salt. In a small bowl whisk together flour, cornmeal and baking powder. Mix into butter mixture. Stir in milk . Spoon batter into prepared muffin cups. Bake in preheated oven for 20 to 22 minutes, or until a toothpick inserted into center of a cupcake comes out clean.

Candy Corn Filling and Icing

175 g unsalted butter, 400 g icing sugar, 2 tbsp milk, 1 tbsp vanilla, 4 tbsp golden syrup

Using an electric whisk beat the butter and the sugar until light and fluffy. Stir in the milk, vanilla and golden syrup and mix until combined. Spoon the butter-cream onto the cupcakes and spread to create a texture. Colour 1/3 of the icing orange and 1/3 of it yellow to create the candy corn look.
