All the wondering, excitement-seeking, bored butterflies of the night who are kept awake by the constant drive of pursuing a better life, a bit of spice with homely comfort, need going no further, put a blanket on the inner fire, just stay and bake bread. This has it all: fire, difference, richness, life, excitement, well-known and unknown…all a woman can ask for.

500 g flour, 10 g sea salt, 20 gr fresh yeast, 300 ml water, 4 tbsp olive oil, 2 red chillies (finely chopped)
150 g rice flour, 50 wheat flour, a pinch of salt, a pinch of sugar, 200 ml water, 20 g yeast
Mix all the ingredients of bread and knead it well. Let it rise for about 60 minutes. After resting know back, divide it into eight pieces and for small “batards” based on the following steps:
1.Turn the cylinder of dough over and pinch the seam and gently roll with your hands from the middle out to make a shorter and fatter loaf.
2.To make this shape, the bread should be noticeably fatter in the middle and this is done using very light pressure applied to the ends of a round loaf so it makes an oval shape.
Once shaped, let it rise for another 30 minutes, meanwhile, mix the ingredients of the paste thoroughly and let it set. After 30 minutes cover the batards with the paste mixture and let it rest for an additional 20 minutes. Finally bake it in 220C pre-heated oven for 15 minutes, then reduce temperature to 200C and bake for a further 25-50 minutes (until bottom sounds when tapped).
