Ingredients

500 g mascarpone cheese
200 g sugar
6 eggs
1 tsp vanilla bean paste
100 g chocolate
About 400 g ladyfingers
500 ml coffee
Cocoa powder for the top

Directions:

Separate the six eggs. Whisk the yolks with the sugar, two tablespoons of coffee for 15 minutes then gradually stir in the mascarpone. Roughly chop the chocolate and put into the mixture. Whisk the egg whites well, and gently fold it all into the mixture. Dip the ladyfingers into the coffee, and place it into a buttered glass tin. When the bottom of the tin is covered with the soaked sponge cake, pour mixture onto that layer, then repeat placing the layers, sponge, mixture, sponge, mixture again. Finally sprinkle the top with cocoa powder.
