Very Grown Up Apple Martini Cupcakes

Winston Churchill said once: “I have taken more out of alcohol than alcohol has taken out of me.” Well, who am I to argue…Therefore, as Mr Churchill would have requested, this ‘Heaven on Earth’ recipe is made with alcohol. Namely, vodka. And my sensible readers, please note: I know that “Alcohol may be man’s worst enemy, but the bible says love your enemy.” (Frank Sinatra)


Ingredients (Makes about 12 regular-sized cupcakes)

For apple cupcake
3 apples, Granny Smith
3 tbsp dark brown sugar
100 g sugar
3-4 tbsp stem ginger syrup
1/8 teaspoon nutmeg
1/2 teaspoon baking soda
1/4 teaspoon salt
2 large eggs
120 ml oil
30-40 ml apple juice
30 ml apple vodka
1 teaspoon vanilla bean paste
250 g all-purpose flour

For filling and “top-coat”
Cider apple sauce and apple vodka

For caramel apple frosting
4 tablespoons butter
90 g packed dark brown sugar
4-5 apple juice
3 teaspoons apple vodka, 2  dry vermouth
450 g powdered sugar
Pinch of nutmeg (optional for a little different taste)

Salted Toffee Decoration
100g caster sugar
3/4 tsp salt



Rinse, core and peel the apples. Chop them up, place into a saucepan with little apple juice and cook until soft. When ready mush the apples with the back of a fork. Set aside to cool. Combine flour, sugar, nutmeg, baking soda, and salt in a medium-sized bowl and whisk to combine. Crack the eggs into a separate, medium-sized bowl and beat. Add the oil, apple juice, vanilla, ginger syrup and cooled apple mush and mix to combine. Combine the wet and dry ingredients until all ingredients come together. Scoop into cupcake liners (or measure 65-70 g). Bake for 20-22 minutes, until a toothpick comes out clean. When cooled cut the top, fill with apple sauce, place top back and finally brush with the mixture apple vodka and dry vermouth . To make frosting, melt butter in a small saucepan over medium heat. Add brown sugar and 4 tablespoons apple juice; cook 1 minute or until sugar melts. Remove from heat; cool slightly. Combine butter mixture and apple vodka in a large bowl. Gradually add powdered sugar; beat with a mixer at medium speed until smooth, beating until required consistency (chill before use). Garnish with salted caramel pieces.
