Salty Seduction: Home-made Mini Pretzelz

According to The History of Science and Technology, by Bryan Bunch and Alexander Hellemans, in 610 AD “…an Italian monk invents pretzels as a reward to children who learn their prayers. He calls the strips of baked dough, folded to resemble arms crossing the chest pretiola… ” The name resembles ‘pretzel’, meaning “little rewards”.

So is it because you have learnt your prayer? Have you been good? Or did you just find your inner child?….If so, it is for you: eat pretzels!

Ingredients (Makes about 18)

250 g flour

65 g butter

50 gr lard

2 tbsp milk

12 g yeast and a pinch of sugar

1/2 tbsp salt

65 g yoghurt

To glaze:

1 egg  (for egg-wash)

2 tbsp flour

2 tbsp salt

Mix and knead all the ingredients and leave it to rise for about an hour in a large bowl covered with foil. After the proving knock back and knead the dough, then divide it into 18 equal pieces. Roll pieces into long strips then form the traditional pretzel shape of each. Apply an egg-wash then bake it in pre-heated oven for about 20 minutes. Meanwhile mix the ingredients of the salt paste. After this initial baking cover with salt-paste and bake for another 5-10 minutes. Cool on a cooling rack.
