Yet another sweet treat made with the all-in-one method: Orange Lemon Cupcake

120 gr butter

120 gr sugar

130 gr self-raising flour

2 eggs, beaten

2 tbsp orange extract

Zest of one lemon and one orange

Juice of one lemon

450 gr icing sugar

200 gr butter

Zest and juice of one lemon

Yellow food colouring


Preheat the oven to 180 C / Gas 4. Line a muffin tin with paper cases. Cream together margarine and sugar till light and fluffy. Add eggs one at a time, beating continuously. Sift in flour and mix gently, finally fold in zest and juice of orange and lemon. Spoon mixture into prepared muffin cases (makes 12). Bake for 20 minutes until golden brown and skewer comes out clean. Cool on a wire rack.
To decorate: mix the butter, icing sugar, food colouring, lemon juice and zest and pipe or spoon on top of cupcakes and finally decorate accordingly.
